4VERY dense  Nov 17, 2009
No, that's not derogatory. This is by far the most thickly-populated bound pile of paper I own.

Having grown up with my mother's copy collecting dust on the shelf, my assumption had always been that it would have simply been some sort of Old Woman's Guide to Potatoes and Pastries. I wish I'd gotten past this tragically unfair assumption earlier, as The Joy of Cooking spans a far greater breadth of culinary information.

What's the difference between hard-boiling and soft-boiling? What are the general principles behind the popular sauces of continental Asia? What's actually in curry? How much wheat flour can I substitute into my bread without risking utter failure? What kind of rice makes an authentic risotto? How can I stop meringue from deflating in the fridge? What should I look for when foraging for my own wild greens? What the heck is a praline?

1,000 pages is just too much to summarize. This is a humbling reference. The only thing to keep in mind is that, while there is an astonishing amount of high-quality, excellent and useful information in this beast of a book, it can also only convey a certain amount of what makes any given cuisine or dish authentic, where it came from, how it's served, and all that wonderful background you'll get from a narrower, less ambitious source.

As a primer to... just about anything, and a great source of new ideas and basic techniques, this is indispensable.

3Joy of Cooking Anniversary Edition Cookbook  Oct 25, 2009
I have an older edition of Joy of Cooking, and wanted to give my daughter a copy of this cookbook because it is such a comprehensive cookbook; however, I was not as pleased with this anniversary edition as with my older version. Perhaps, I just do not adapt to "change" - perhaps she will enjoy the newer edition.

This excellent, comprehensive American cookbook is recommended for novices and experienced cooks alike. I bought this copy for my college aged daughter.

4The One Book To Have in The Kitchen  Sep 25, 2009
This is the best overall reference book for cooks from beginners to experts. It includes information about food types, safety in food preparation, a description of tools needed to make specific dishes, sample menus,...the answer to just about any question one might have. This is the one book to have on the kitchen shelf.

Even though I have seen this book around all my life I never had the desire to buy one until I watched Julie and Julia. This book is not only full of recipes but also full of information that any and every cook needs. I was very impressed with it and wondered why I waited so long to have my own copy. It took me nearly a week and a half to read through the information, skimming over what I don't normally use or need. Lots of traditional recipes and new ones as well. I am not disappointed with this purchase
